
Cutting & Charcuterie Board Maintenance & Care
Note: If you let food waste sit on your board for an extended period of time, you run the risk
of the food debris staining or causing odors. So when you finish cutting up food items on your
board it is better to clean it sooner rather than later
Simple Cleaning
To clean minor or insignificant food prep soiling(veggies, nuts or other relatively dry foods), simply wipe the board off with a clean damp cloth or dry paper towel.
Deep Cleaning
To clean significant food prep soiling (bacon, meat grease, fish oil, concentrated fruit juices, etc):
1. Using a scraper or paper towel wipe off all food prep particles into the sink or garbage, then hold the board under warm running water, wetting down the entire surface, front and back.
2. Give a small squirt of dish soap on the dirty, wet, board surface, then gently scrub the board clean, using a sponge/scrubby, being sure to go over/scrub the entire board area. Once you have all debris cleaned off, hold the board under the warm running water again, rinsing off all soap and suds, rinsing both sides, front and back.
Drying
It is critically important to thoroughly dry the board. After rinsing off all soap and suds, front and back, wipe down the entire board with a clean cloth towel, removing all excess water, then stand the board up on its edge against a back wall or other means, whereby air is allowed to circulate all around the board, evenly drying both the top and bottom, helping to avoid warping or cracking. Once the board is totally dry you can lay it flat wherever you want it displayed.
Not Dishwasher Safe
DO NOT wash your board in a dish washer or submerge in sink water to soak. Either of these two practices will destroy your board in short order.
Wood Conditioning
Periodically, when board looks or feels dried out, or dull, clean the board thoroughly, then after dry, apply a liberal rubbed on coat of “Ledge Rock Wood Balm” to the entire area (front, back, and sides), Let stand for 2 hours, then wipe off excess balm with a clean soft cloth, then let stand overnight for curing. The amount of time between wood balm conditioner applications depends upon usage and how often the board is washed with soapy water.
Avoid Oils
DO NOT condition the board using cooking oils such as vegetable oil, olive oil etc., as these oil will eventually get rancid. Use ONLY Mineral Oil(food grade) or walnut oil based conditioners.
Light Protection
Extended exposure to UV light can change the color appearance over time and the vibrant wood colors, when new, will become darker.
